        在我們眼裡,似乎很難直覺就把以色列的食品和“美酒佳肴”聯繫起來,因為他給我們太多關於宗教和信仰的聯想。但是就是這樣一片土地上,到處充滿了神祕的色彩,在《聖經》裡被讚譽為“牛奶與蜂蜜的土地”,意思就是說各式各樣的食品,層出不窮,豐饒富裕。其實,以色列的食品烹飪可以追溯到三千年前,受到歐洲,中東,北非,拉丁美洲和亞洲的深遠影響,不同的烹飪藝術和迥異的飲食習慣匯集在一起,隨著時間的推移,漸漸形成自身的特點──熔爐風格。

  以色列人對於食品原料的挑剔,是其他民族和國家所不及的,那是因為猶太教有個“Kosher”教規,規定了許多不能吃的食物。台灣食品進口到以色列之前,以色列都會派教長"Rabi"來檢查食品的製作過程。確定沒問題並符合他們國家的規定才會核發"Kosher"標章。這樣食品才能進到以色列。

        提起葡萄酒,也許會讓你想到澳洲,那裡的葡萄酒都帶有陽光、沙灘的歡樂,或是法國,濃醇圓潤的酒如同浪漫的情結,帶來不盡的回味……但我們都忽略了中東是葡萄栽培業的故鄉,在這裡,葡萄酒釀造業的歷史可追溯到《聖經》時代,所以把這裡的葡萄酒稱之為“古老的美酒”一點也不為過。特殊的地理環境和天氣孕育出優良的葡萄品種,經歷三個不同階段的發展,以色列的葡萄酒釀造隨著工業的不斷發展,已經達到了爐火純青的地步。現下。在全世界各地高檔的場所,都能找到精品以色列葡萄酒。  --轉載東方網

Special Reserve Series

Tishbi, Special Reserve, Cabernet Sauvignon, Ben Zimra, 2002: Showing better now than at a barrel tasting. Deep purple in color, ripe, bold and concentrated, the wine has solid and still firm tannins, those well balanced by oak and fruits. The chewy tannins, deep currant, oak and spicy aromas and flavors make the wine one that will profit from bottle time. Drink now–2008, perhaps longer. Score 90. K (Re-tasted 30 Dec 2004)

Tishbi, Special Reserve, Cabernet Sauvignon, Gush Etzion, 2002: Medium to full-bodied with surprisingly soft tannins and aromas and flavors of currant, cherry, plum and wild berry fruits, just the right hint of wood, and a hint of anise on the medium finish. A well-balanced wine that promises to develop with further aging. Drink now–2007. Score 87. K (Re-tasted 30 Dec 2004)

Tishbi, Special Reserve, Merlot, 2002: Graceful, with a deep, almost inky garnet color and generous but smooth tannins, this supple and well-balanced medium to full-bodied wine shows plums, ripe cherry, chocolate and gentle cedar-oak aromas and flavors along with a sweet and spicy herbal finish. Best now–2007. Score 90. K (Re-tasted 30 Dec 2004)
Tishbi, Special Reserve, Chardonnay, 2004 (Barrel Tasting): Aged in 300 liter French barrels, this deep golden, full-bodied and buttery-creamy white shows appealing pear and vanilla aromas and flavors. At this stage somewhat dominated by the wood but time may help. Tentative Score 86-88 K (Tasted 30 Dec 2004)

Estate Series  

Tishbi, Estate, Cabernet Sauvignon, 2004 (Barrel Tasting): Medium- to full-bodied, with silky smooth tannins and layers of currant, berry and plum fruits, those matched nicely by hints of spicy wood and a light herbal overlay. Best from release-2008. Tentative Score 86-88. K (Tasted 30 Dec 2004)

Tishbi, Estate, Cabernet Sauvignon, 2003 (Advance Tasting): Deep garnet, medium- to full-bodied, with an appealing earthy overtone to currant and berry fruits.Overall good balance and structure bode well for the future. Drink from release-2007. Score 87. K (Tasted 30 Dec 2004)

Tishbi, Estate, Cabernet Sauvignon, 2002: My earlier notes hold firmly: Oak-aged for 12 months in small casks, this dark garnet medium to full-bodied wine offers up generous but soft and already nicely integrating tannins, appealing currant, plum and wild berry fruits, and hints of vanilla and smoky oak. Drink from release–2006. Score 87. K (Re-tasted 30 Dec 2004)

Tishbi, Estate, Merlot, 2004 (Barrel Tasting): Made from grapes from Sde Boker in the Negev, this soft, medium-bodied wine offers a few berry and spice flavors but seems badly out of balance and even at this early stage is showing signs of browning. Tishbi, Estate, Merlot, 2003 (Advance Tasting): Deep garnet red, medium-bodied, with firm tannins that yield in the glass. Good balance between lightly smoky wood and plum and currant fruits all leading to a moderately long finish. Score 86. K (Tasted 30 Dec 2004)

Tishbi, Estate, Chardonnay, 2004 (Advance Tasting): Made from organically raised grapes from the Gush Etzion region, this unoaked wine shows some melon and pear fruits but is lacking in acidity and somewhat flat on the palate and fails to excite. Tentative Score 83-85.K (Tasted 30 Dec 2004)

Tishbi, Estate, Sauvignon Blanc, 2004 (Advance Tasting): Light straw in color, medium-bodied and aromatic, with summer fruit and green apples on the palate. Good balance between natural acidity and fruits. Drink now. Tentative Score 86-88. K (Tasted 30 Dec 2004)

Tishbi, Estate, White Riesling, 2004: Light straw colored, medium-bodied, with tropical and citrus fruits along with a hint of litchis. Lively and pleasant but lacking complexity. Drink now. Score 85. K (Tasted 30 Dec 2004)

Vineyards Series

Tishbi, Vineyards, Cabernet Sauvignon, 2004 (Advance Tasting): Dark cherry red in color, medium-bodied with soft, almost unfelt tannins and cassis, blueberry and plum flavors all on a somewhat sweet finish. Drink now. Score 84. K (Tasted 30 Dec 2004)
Tishbi, Vineyards, Cabernet Sauvignon, 2003: Medium-bodied, with moderate tannins integrating nicely and appealing currant and berry fruits. Not complex but pleasant. Drink up. Score 85. K (Re-tasted 30 Dec 2004)

Tishbi, Vineyards, Merlot, 2004 (Advance Tasting): Dark cherry red to purple in color,medium-bodied, with soft tannins and forward plum and black cherry fruits. Look as well for hints of smoky oak and Mediterranean herbs.Drink now. Score 85. K (Tasted 30 Dec 2004)

Tishbi, Vineyards, Merlot, 2003: Garnet red in color, this medium-bodied blend of 85% Merlot and 15% Cabernet Sauvignon offers up spicy plum and currant fruits and light hints of smoky, spicy oak. Perhaps a bit astringent. Drink now–2006. Score 85. K (Re-tasted 30 Dec 2004)

Tishbi, Vineyards, Carignan, 2004 (Advance Tasting): A wine made especially for Ikea, labeled as 85% Carignan and 15% Cabernet Sauvignon but with a remarkable resemblance to the Tishby Cabernet-Petite Sirah blend of the same year. A pleasant quaffing wine. Drink now. Score 84. K. (Tasted 30 Dec 2004)

Tishbi, Vineyards, Sauvignon Blanc, 2004: Pale golden straw in color, unoaked and crisply dry with some uncomplex grapefruit and pineapple fruits. Simple but appealing as a quaffer. Drink now. Score 84.K (Tasted twice with consistent notes 30 Dec 2004)
Tishbi, Vineyards, Emerald Riesling, 2004: Semi-dry, with grapefruit and green applefruitinessand a not offensive level of sweetness. An acceptable entry-level wine. Drink up. Score 84. K (Tasted 30 Dec 2004)

Tishbi, Vineyards, French-Riesling, 2004: A virtual twin to the 2003 wine. Semi-dry, lively,moderately sweet and with orange, lemon and pineapple aromas and flavors. Drink up. Score 85. K (Tasted 30 Dec 2004)

Tishbi, Vineyards, French-Riesling, 2003: Surprisingly good considering the blend (about 70% French Colombard and the remainder Emerald Riesling) this lively semi-dry wine has good balancing acidity to offset moderate sweetness and appealing citrus and pineapple aromas and flavors. Tishbi, Cabernet Sauvignon-Petite Sirah 2004: Cherry or ruby red, fresh, lively and with berry-cherry fruits. Soft tannins make this an easy quaffing wine. Drink now. Score 84. K (Tasted 30 Dec 2004)
